Sweet Love …

A few days ago my wonderful friend, Rona, got married to her sweetheart, O.P. It was such a beautiful and love-filled day and I am so glad that I not only got to be there to witness it, but that I had the opportunity to make the very special cake/cupcakes for her very special day.

Yes, you all know how I feel about weddings, so I won’t reiterate my intense love for them. This wedding was so laid-back, so easy, so relaxed and therefore truly reflected the amazing love that these two have for each other. I wish them ALL the luck in the world, all the happiness, joy and peace of mind and heart, as well!!!

Though I love weddings, doing cupcakes and cakes for them gives me MUCH anxiety and panic. If you know me, you know how easy it is for me to fall into said anxiety and panic, but seriously, these kind of events send me spiraling! The wedding cake is such an integral part of the wedding ceremony (in my opinion). There’s always talk after the event of how the cake was, how it looked, the detail, etc. and therefore, being responsible for doing the WHOLE thing this time, well, yeah, it adds a LOT of pressure to a baker like myself whose used to doing smaller scale productions!


Nevertheless, after many many cups of chamomile teas, calming words from my mother and sister, I managed to successfully prepare 150 delightful little Lemon Meringue Cupcake, Classic Vanilla Cupcakes AND one Lemon Meringue Cake with fondant icing (and an adorbs wedding cake topper of a bride and groom on a motorbike to honor the groom’s riding hobby) for the wonderful bride and groom and all of their guests.

Rona, thank you once again for choosing me to be part of the team that serviced your ceremony. I’m glad you enjoyed them and I look forward to doing the same for your baby shower, whenever that may be, no pressure now, none!! 🙂

Oreo Chocolate Cake

We had an order this weekend for a cake, no real instruction, just “something chocolatey”. Those are always the best kind of orders. It allows me the opportunity to experiment and play around with things.

The other day I’d bought some sour cream with the hopes of using it in a dinner meal, turns out there was a change of plans and I was left with sour cream and no dinner meal. I knew there had to be SOME way to incorporate this sour cream into something yummy and chocolatey and then remembered a recipe I once saw for delicious Chocolate Sour Cream frosting. I didn’t have any dark/milk chocolate in the house and time was not on my side so I substituted the dark/milk chocolate for white chocolate discs that I DID have and it turned out just as good, if not better. The frosting kind of had a cream cheese taste to it, and we all know how much I love me some cream cheese frosting on my cakes and cupcakes!!!

After dressing up the rich chocolate fudge cake with the White Chocolate Sour Cream frosting, and decorating the top with chocoalte cake shavings taken from the cut pieces of cake I got when cutting the cake down flat, I realised that this cake, just looked like it needed Oreos in its life. Hence how this cake became the Oreo Chocolate Cake.

Bella Pastry Wedding Vanilla Buttercream Cupcakes with Vanilla Buttercream Frosting and Fondant Flowers

Wedding season (actually I can never tell when wedding season actually starts or ends here), anyway, I feel like Wedding Season started here in Botswana about a few months ago, now that it’s summer. I do not understand how anyone would want to get married in the summer, though, but anyway, yes, weddings have been in FULL effect and no one loves a good wedding like I do!

With Bella Pastry taking major flight (Thanks be to God), weddings have an even more special place in my heart and they are officially my new favorite event to cater.

Right before we closed for Christmas holidays I had the pleasure of doing the wedding “cake” for a small (200 people or less) wedding. I put cake in quotes because the wedding “cake” was actually a tower of delicious little vanilla buttercream cupcakes and then finally a cake topper (which was not done by Bella Pastry).

The cupcakes were used partly for display and also given away as wedding favors (which I think is an incredible idea that more of ya’ll need to get up on mmmkay?!!).
